The five stages of every batch
The details change with the fruit, but the shape of the journey is always the same.
Prepare
Sanitise everything, prepare the must and take a starting gravity.
Ferment
Pitch the yeast and let it turn sugar into alcohol over one to two weeks.
Rack
Move the wine off its sediment into a clean vessel under an airlock.
Clear and age
Stabilise, let it fall bright, and give it time to round out.
Bottle
Bottle when it is stable and clear, then label it and wait a little longer.
